There are two types of people in this world: the type who love salt on their watermelon, and those who do not. I firmly believe that salt on watermelon is the only way to go! Our family has been salting our watermelon since the beginning of time. Do you salt when you eat watermelon? 

Today’s recipe is SO delicious. Even if you don’t like salty watermelon, you should still give this salad a try. Red wine vinegar makes a wonderful dressing when combines with olive oil, salt and pepper, and feta cheese.

Another great thing about this salad is that it lasts in the fridge. My last batch of this watermelon, feta and mint salad lasted a whole week in the fridge. I ate a little bit each day along with my lunch and it was a great sweet and salty addition to my meal!

Watermelon Mint & Feta Salad

Ingredients

  • 1 5lb seedless watermelon, diced
  • 1 Vidalia onion, sliced
  • 1/4 cup red wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup olive oil
  • 2 tbsp fresh mint, chopped
  • 4 oz feta cheese
  • baby arugula, for serving

Instructions

  1. In a small bowl, whisk together the vinegar, salt, pepper, olive oil, and mint. 

  2. In a large bowl, combine the watermelon, onion, dressing, and feta cheese. Toss to coat well. 

  3. Serve alone or on a bed of baby arugula or spinach.
