So yesterday my blog did something funky– it accidentally published this post before I could write any words to go along with the picture and recipe, haha. I must have scheduled it to be posted and then forgot to update it before it published itself.  I quickly had to un-publish it, probably 4 hours later before I even noticed. 

I definitely have wedding brain! 3 weeks to go until my brain returns to normal thinking.

These chicken meatballs are tasty, quick, easy, and can be used for many things. I ate them for lunch, about 4-5 of them with a side of the mayo last week. One day I ate them for an afternoon snack. Pop them in the microwave and you’ve got yourself a tasty snack! 

If you’re looking for another dish to add to your weekly meal prep, this is a great one to add. I’m always trying to find different ways to cook chicken, as it’s actually my least favorite meat. It needs a lot of flavor added to it to taste good.

To add flavor to the ground chicken, I added onion powder, salt, pepper, sriracha, soy sauce, egg and plenty of breadcrumbs. I baked them in a mini muffin tin, and while they were cooking, whisked together the simple sauce of mayonnaise and sweet chili sauce. 

Btw, I love sweet chili sauce. It’s so tasty — the other day I made a trout filet for lunch and just poured a little on top of the fish in the pan while it was cooking and it tasted amazing. So many ways to use sweet chili sauce. Combined with mayo, it makes the perfect dipping sauce!

Here’s the recipe for Chicken Meatball Poppers with Spicy Sweet Chili Mayo! 

Chicken Meatball Poppers with Spicy Sweet Chili Mayo

For the meatballs
  1. 1 1/2 lb ground chicken
  2. 1 tsp onion powder
  3. ½ tsp salt
  4. ¼ tsp black pepper
  5. Squirt of sriracha
  6. Splash of soy sauce
  7. 1 egg
  8. 1 cup panko breadcrumbs
  9. ½ cup regular breadcrumbs
For the spicy mayo
  1. 4 tbsp mayo
  2. 2 tbsp sweet chili sauce
  3. Splash soy sauce
  4. Squirt of sriracha
Instructions
  1. Preheat your oven to 400 degrees F.
  2. Grease a mini muffin tin. Combine all of the ingredients for the meatballs and mix with your hands well. Add extra breadcrumbs if the mixture is sticking to your hands.
  3. Divide into 1 Tbsp size balls and place into tin.
  4. Bake at 400 F for 25 minutes or until 165 internally.
  5. Mix together the ingredients for the sauce in a small bowl. Serve on the side.
