If we were having coffee this morning, I’d tell you it’s been a long week so I requested two shots of espresso in my hot mocha! And that you’re welcome to a bite of my chocolate chip muffin :) 

If we were having coffee this morning, I’d tell you all about the photo shoot I had with my friend Dixya last week. I went over to her house loaded up with outfits, food and a bottle of wine. She used her awesome new camera and her mad photog skills to take some new photos of me for the blog. If you look around the different pages on the website here (see refreshed About Me, Contact Me, Work With Me pages), you’ll see some of them posted.  It was about time I got some new head shots. I also wanted some pictures of me cooking and hanging out in the kitchen. Dixya’s kitchen is basically my dream kitchen– white everything with a gorgeous butcher block island. I brought yellow flowers, lemons, greenery, and coordinated my outfits to be blue so I’d match my blog colors. It was so much fun!! 

If we were having coffee this week, I’d tell you that on Tuesday, I did my very first Facebook Live. It’s been something on my to-do list for a very long time and I finally built up the courage! I made this Panko Crusted Tilapia. It did fairly well, but my kitchen is not the best for videos. It’s dark and frankly, kind of ugly. Someday I will have the gorgeous white kitchen of my dreams. I actually shoot all of my recipe videos on a marble slab on a table in my bedroom! Much better lighting in there.  

If we were having coffee this morning, I’d tell you that on Wednesday night, I met my Mom and Grandma at the Painting with a Twist in McKinney. I had bought them both gift certificates back in June for their birthdays and we just got around to scheduling it. If you’ve never heard of Painting with a Twist, they’re all over the country. Basically you bring the wine and they teach you how to paint something. We chose the pumpkin painting for obvious reasons. They turned out pretty great! I come from an artistic family — my Grandma actually makes these beautiful oil paintings. I dabble in painting myself– mostly landscapes. I just bought a watercolor set and I’ve been experimenting with those. Anyway, we had a fun night! 

If we were having coffee this morning, you might ask me about our recent trip to Ireland, Scotland and London. I’d tell you that I posted a full recap of our 7 days in Ireland this week! Be sure to go back and read it if you haven’t already. We had a wonderful time and wish we were still over there. And, I kind of miss having baked beans for breakfast. Does anyone have a recipe for Irish/English breakfast beans!?

If we were having coffee this morning, I’d tell you that I ate a quick lunch at Panera yesterday and they had their AUTUMN SQUASH SOUP back on the menu! It’s my all-time seasonal favorite. I love it so much that last year, I bought a couple bowls of it and took it home. I spent hours recreating it from scratch in my kitchen, using my taste buds and the ingredient list from Panera’s website and VOILA! It tastes exactly the same. Here’s the recipe

And finally, if we were having coffee today, we’d agree that the Las Vegas shooting was just mind boggling. How one human being can be twisted and evil. Then I’d show you this article I just read about mental illness. We are a culture that continually neglects mental health, and it’s only getting worse. Also, every day we are all relying more and more on social media and the internet for our main source of socialization and it’s just not good enough. Loneliness is a very strong and crippling feeling.

What can we do about this? Reach out to people who you think may be lonely. Get together often with friends. Don’t let a busy life take you away from actually enjoying it and building relationships. <3
